This past Sunday I started off my day with a big slice of cake I’d like to call “The Chocolate Chip Cookie Cake”. I then followed it with an 8.25 mile run, but such is the life of a baker and aspiring half-marathon runner. Plus, the running negates the calories of the cake so that’s an added bonus!
Since I was a child the chocolate chip cookie has been my favorite cookie to bake (and eat). I started off with the traditional Nestle chocolate chip cookie recipe, but in my adult years I got more adventurous and tried things like replacing butter with applesauce to make them softer (and healthier) or using all bread flour to make them chewy.
My love of chocolate chip cookies made is what me want to try and make them into a cake. So on Saturday I broke out the mixer and my favorite Nordicware bundt pan and got to work. The result: a chocolate-chip studded pound cake that is slightly crispy on the outside, but soft on the inside, just like a chocolate chip cookie.
